Dry Aged Bacon Potato Cakes

  • 3 slices Dry-Aged Bacon
  • 2 large potatoes
  • 1 tablespoon potato starch
  • 1 tablespoon mayonnaise
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 60g sour cream
  • Italian parsley (as needed)
  • 1Heat a frying pan and cook the dry-aged bacon slowly until crispy. Remove the bacon and place it on a paper towel to drain, leaving the bacon fat in the pan.
  • 2Peel the potatoes and cut them into approximately 1cm cubes. Place them in a microwave-safe bowl, add 1 tablespoon of water, cover with plastic wrap, and microwave at 600W for 5 minutes.
  • 3Add the potato starch, mayonnaise, salt, and pepper to the potatoes. Lightly mash and mix.
  • 4Divide the mixture into 8 equal parts and shape each into a 1cm thick round cake. Add olive oil to the frying pan, then add crushed garlic. Once fragrant, add the potato cakes and cook until crispy on both sides.
