Canadian Bacon Tacos with Pink Tortilla

Beets Tortilla
- 50g Bread flour
- 50g Cake flour
- 60g Cooked beets (pureed)
- 2g Baking powder
- Pinch of salt
- 1 tablespoon Olive oil
Honey Mustard Sause
- 2 tablespoons Greek yogurt
- 1 tablespoon Mayonnaise
- 2 teaspoons Dijon mustard
- 1 teaspoon Honey
Tomato Salsa
- 1 Tomato (cut into 2cm cubes)
- 1/4 Red onion (finely chopped)
- 2 teaspoons Olive oil
- 1 tablespoon Lemon juice
- Salt and pepper, to taste
Fillings
- 8 slices Jones Dairy Farm Canadian Bacon
- 4 Lettuce leaves (shredded)
- 4 Snap peas (microwaved 1 min)
- Cheese, as desired
- 1Make beet tortillas: Blend cooked beets into a puree. In a bowl, combine flours, baking powder, salt, beets, and olive oil. Mix until dough forms. Knead 5 min, cover, and rest 30–60 min.
- 2Divide into 4 portions, flatten between plastic, and shape to 15cm circles. Cook on skillet 30 sec per side.
- 3Shred lettuce and microwave snap peas for 1 min.
- 4Mix Greek yogurt, mayonnaise, Dijon mustard, and honey for the sauce.
- 5Combine tomato and onion with lemon juice, olive oil, salt, and pepper for salsa.
- 6Assemble tacos: Spread sauce on tortilla, layer Canadian Bacon, lettuce, snap peas, salsa, and cheese.
