Recipes No-Sugar Bacon Madeleine Salée
Savory madeleines infused with Jones Dairy Farm No-Sugar Bacon, cheese, and herbs for a delightful bite-sized treat.

No-Sugar Bacon Madeleine Salée
Servings: 8 | 1 hour
- A:60g Cake flour / 2g Baking powder / 2g Salt
- B:60g Egg / 30g Milk / 1/2 teaspoon Grated garlic
- C:30g Butter / 10g Olive oil
- 2 slices Jones Dairy Farm No-Sugar Bacon
- 20g Grated cheese
- 50g Shredded cheese
- 4 Boiled quail eggs (halved)
- Dried oregano, as desired
- Coarsely ground black pepper, as desired
- 1 Cook bacon in a skillet until crisp, then finely chop. Halve the boiled quail eggs.
- 2 Warm butter and olive oil to about 100°F (40°C).
- 3 In a bowl, whisk together flour, baking powder, and salt. Add beaten egg, milk, and garlic, and mix.
- 4 Add butter-oil mixture in two portions, mixing after each addition.
- 5 Fold in grated cheese, bacon, and black pepper. Place batter into a piping bag and chill for 30 minutes.
- 6 Grease molds and fill to 70% full. Top with shredded cheese and quail egg halves, sprinkle with oregano.
- 7 Bake at 450°F (230°C) for 3 minutes, then reduce to 350°F (180°C) and bake about 12 minutes.
