Loaded Baked Potato Dip with Canadian Bacon
Servings 6-820-40 minutes
- 500g potatoes
- 1 package (170 g) Jones Dairy Canadian Bacon
- 225g cream cheese, softened
- 180 ml Greek yogurt
- 1 cup shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp pepper
Optional toppings:
- crushed potato chips
- chives
- 1Preheat oven to 220°C.
- 2Wrap the russet potato in a wet paper towel and microwave until soft, about 4–5 minutes. Let it cool slightly.
- 3In a skillet over medium heat, cook the diced Canadian bacon for 4–5 minutes, or until crisp.
- 4Scoop the flesh of the baked potato into a large bowl. Mash using a potato masher.
- 5Add cream cheese and Greek yogurt, and continue mashing until well mixed.
- 6Stir in cheddar cheese, ¾ of the cooked Canadian bacon, garlic powder, onion powder, salt, and pepper. Mix until fully combined.
- 7Transfer mixture into a baking dish. Top with remaining Canadian bacon and crushed potato chips.
- 8Bake for 20 minutes.
- 9Garnish with fresh chives and serve with crunchy potato chips.
