Recipes Pea and Canadian Bacon Soup (Witches’ Brew)
This soup is delicious all-year-round, but is especially good for Halloween season because of it’s bold green color. Enjoy this with crispy Jones Dairy Farm bacon toppings for a hearty starter or main.
Pea and Canadian Bacon Soup (Witches’ Brew)
Servings: 435 minutes
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 650g petits pois
- 750ml vegetable stock
- 1 tbsp butter, optional
Toppings
- 4 rashers Jones Dairy Farm Canadian Bacon 4枚
- 1 handful of pea shoots, optional
- 1Heat the olive oil in a large saucepan. Gently cook the onion over a medium heat for 5-6 mins until translucent but not browned. Add the garlic and cook for a further minute. Stir in three-quarters of the petit pois, then add the vegetable stock. Bring to the boil, before simmering for 10-12 minutes.
- 2Meanwhile grill the Jones Dairy Farm Canadian Bacon until it begins to crisp.
- 3Allow the soup to cool down a little, then transfer to a food processor and blend until the consistency is smooth.
- 4Return the soup to the pan and add almost all of the remaining petit pois, reserving a few for toppings.
- 5Bring to the boil, then simmer until the whole peas are soft. Season to taste, and add the butter, if using.
- 6Transfer the soup to Halloween themed bowls and scatter bacon pieces and peas on top.
