Celery and Canadian Bacon Salad
Servings: 2-330 minutes
- 5 slices Jones Dairy Farm Canadian Bacon
- 150g Celery (stalks and leaves)
- 1 Cucumber
- 1/2 Onion
- 1 Lemon (half sliced, half for dressing)
- Fresh mint leaves, as desired
Lemon Dressing
- Juice of 1/2 lemon
- Zest of 1/2 lemon
- 1 teaspoon White wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon Honey
- 2 tablespoons Extra virgin olive oil
- 2 tablespoons Extra virgin olive oil
- 1For the dressing, combine lemon juice, zest, vinegar, mustard, and honey. Slowly whisk in olive oil until emulsified. Season with salt and pepper.
- 2Peel strings from celery stalks and slice diagonally into 5mm pieces. Chop leaves into bite-sized pieces.
- 3Thinly slice onion, briefly soak in water, then drain.
- 4Cut cucumber into chunks.
- 5In a bowl, combine cucumber, celery, onion, Canadian Bacon, and lemon slices. Toss with dressing and garnish with mint leaves.
