Avocado Toast with Bacon
Servings 410-30 minutes
- 4 slices Jones Dairy Farm Dry Aged Bacon
- 2 large eggs
- 2 large avocados, sliced
- 4 slices artisan sourdough bread, toasted
- 2 tablespoons hot honey
- Flaky sea salt
- 1Preheat oven to 200°C.
- 2Line a baking sheet with foil and add bacon slices.
- 3Bake for 15–20 minutes until the bacon is brown and crisp.
- 4Drain bacon on paper towels and chop into small pieces.
- 5While the bacon cooks, bring a small pot of water to a boil.
- 6Gently lower the eggs into the boiling water using a slotted spoon.
- 7Boil for 7 minutes, then remove and run under cold water until cool to the touch.
- 8Peel the eggs.
- 9Layer half of an avocado on each slice of toasted bread.
- 10Grate ½ of a hard-boiled egg over the avocado
- 11Sprinkle with chopped bacon, drizzle with hot honey, and sprinkle with sea salt.
- 11Serve immediately!.
