Maple Bacon Chocolate Chip Cookies

Candied Bacon
- 4 slices Jones Dairy Farm Dry-Aged Bacon
- 2 tbsp light brown sugar
- 1 tbsp maple syrup
Cookie Dough
- 110g unsalted butter
- 70g light brown sugar
- 70g granulated sugar
- 1 egg
- A: 180g bread flour
- A: 1 tsp baking powder
- A: ½ tsp baking soda
- A: ¼ tsp salt
- 60g chocolate chips
- Step 1: Make the candied bacon: Cut the dry-aged bacon into 1 cm squares and fry in a pan until crispy. Transfer to a paper towel-lined plate. In a small saucepan, combine light brown sugar and maple syrup, then heat until large bubbles form. Add the crispy bacon and coat well. Spread the mixture onto parchment paper and let it cool.
- Step 2: In a heatproof bowl, melt the unsalted butter in the microwave. Add light brown sugar and granulated sugar and mix well. Stir in the beaten egg.
- Step 3: Sift together ingredients marked A, then fold them into the mixture using a spatula.
- Step 4: Add the chocolate chips and candied bacon, mixing until combined. Reserve a small amount of chocolate chips and bacon for topping. Chill the dough in the refrigerator for 30 minutes.
- Step 5: Line a baking sheet with parchment paper. Use an ice cream scoop or spoon to portion the dough, spacing them apart.
- Step 6: Preheat the oven to 350°F (180°C) and bake for about 15 minutes, or until the bottoms are golden brown.
- Step 7: While the cookies are still warm, press the reserved chocolate chips and bacon pieces onto the tops.
- Step 8: The cookies will be very soft when fresh out of the oven. Allow them to cool before serving.
