Orange Pork Meatballs with Asparagus and Sweet Citrus Sauce
Servings: 325 minutes
- 1/2 package Jones Dairy Farm Pork Meatballs, defrosted
- 1/2 pound asparagus, trimmed and chopped into 1/2-inch pieces
- 1 green onion, finely chopped
Sauce:
- 1/4 cup fresh orange juice
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce (gluten free if needed)
- 1/2 tablespoon mirin
- 1 teaspoon cornstarch
- 1 teaspoon ground ginger
- 1 teaspoon rice vinegar
- 1/2 teaspoon garlic powder
- 1Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease it.
- 2Arrange the meatballs on the sheet pan, leaving space between each. Scatter the chopped asparagus around them. Bake for 20–25 minutes, or until meatballs are heated through and asparagus is tender.
- 3While the meatballs bake, prepare the sauce. In a small saucepan, whisk together all sauce ingredients. Heat over medium until the mixture comes to a boil, then reduce to a simmer and cook until thickened.
- 4Once the meatballs are done, transfer them to the saucepan with the sauce and toss to coat evenly.
- 5Serve the meatballs and asparagus over freshly steamed white rice. Garnish with chopped green onion.
