No-Sugar Bacon Kale Salad
Servings: 430 minutes

  • 4 slices Jones Dairy Farm No-Sugar Bacon
  • 4 leaves Kale
  • 1 Natsumikan Orange (peeled, or substitute grapefruit)
  • 1/4 Red onion (thinly sliced)
  • 1 ball Mozzarella cheese (torn into bite-sized pieces)

  • 1 teaspoon Whole-grain mustard
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Maple syrup
  • Salt and pepper, to taste
  • 1Combine dressing ingredients in a bowl and mix well.
  • 2Remove kale stems, tear leaves into bite-sized pieces, place in a bowl, sprinkle with salt and a little olive oil, and massage gently.
  • 3Cook bacon in a skillet until crisp, drain on paper towels, and cut into 1cm strips.
  • 4Add red onion, summer orange, and dressing to the kale and toss lightly.
  • 5Top with bacon and mozzarella cheese.
