A colorful salad with crisp kale, sweet-tart Natsumikan orange, and No-Sugar Bacon for a savory accent.

No-Sugar Bacon Kale Salad
Servings: 430 minutes
- 4 slices Jones Dairy Farm No-Sugar Bacon
- 4 leaves Kale
- 1 Natsumikan Orange (peeled, or substitute grapefruit)
- 1/4 Red onion (thinly sliced)
- 1 ball Mozzarella cheese (torn into bite-sized pieces)

- 1 teaspoon Whole-grain mustard
- 2 tablespoons Apple cider vinegar
- 2 tablespoons Extra virgin olive oil
- 1 teaspoon Maple syrup
- Salt and pepper, to taste
- 1Combine dressing ingredients in a bowl and mix well.
- 2Remove kale stems, tear leaves into bite-sized pieces, place in a bowl, sprinkle with salt and a little olive oil, and massage gently.
- 3Cook bacon in a skillet until crisp, drain on paper towels, and cut into 1cm strips.
- 4Add red onion, summer orange, and dressing to the kale and toss lightly.
- 5Top with bacon and mozzarella cheese.
