No-Sugar Bacon and Bean Omelette
Makes 230 minutes
- 2 slices Jones Dairy Farm’s Uncured No-Sugar Bacon
- 70g mixed beans
- 1/2 wheel of Camembert cheese
- 6 cherry tomatoes
- Parsley (as needed)
Egg Mixture:
- 4 eggs (A)
- 2 tablespoons heavy cream (A)
- Salt and pepper (to taste) (A)
- 1 tablespoon Parmesan cheese (A)
- 1Mix all the (A) ingredients to make the egg mixture.
- 2Cut the no-sugar bacon into 1cm wide pieces. Cut the Camembert cheese into approximately 2cm cubes. Halve the cherry tomatoes.
- 3Divide the bacon, cheese, and tomatoes between two molds, then pour the egg mixture over them.
- 4Bake in a preheated oven at 220°C for about 20 minutes. Garnish with finely chopped parsley before serving.
