Spooky Canadian Bacon Egg Cups
Servings: 630 minutes
- 6 slices Jones Dairy Farm Canadian Bacon
- 6 eggs
- Salt and pepper to taste
- 300g potatoes
- 30g butter
- 2 tablespoons milk or heavy cream
- Note: Use chocolate icing pens or chocolate pens for the eyes. You can also use small cuts of nori (seaweed) for eyes.
- 1Make the mashed potatoes: Peel the potatoes and boil them until soft. Drain the water and mash the potatoes while they are still hot. Add butter and gradually add milk then season with salt and pepper Use a hand blender to achieve a creamy consistency and fill a piping bag with the mixture.
- 2Preheat oven to 200°C (400°F). Lightly grease a muffin tin and place a slice of Canadian Bacon on the bottom and crack an egg into each one. Season with salt and pepper, then bake for about 15 minutes.
- 3Remove egg cups from the oven and pipe mashed potatoes. Adding eyes is optional.
