- 12 slices Jones Dairy Farm No-Sugar Bacon
- 1 zucchini
- 3 shishito peppers
- 3 sweet long peppers
- Parmesan cheese, to taste
- Coarse black pepper, to taste
- 1/2 lime or lemon
- 1Cut the zucchini into 6 equal pieces lengthwise. Make a small cut in the shishito and sweet long peppers to prevent them from bursting.
- 2Wrap the no-sugar bacon around the vegetables from step 1. Use toothpicks to secure the ends of the bacon if the vegetables are slippery.
- 3Preheat the air fryer to 200°C (392°F). Cook the zucchini for about 12 minutes and the shishito and sweet long peppers for about 7 minutes.
- 4Plate the rolls and sprinkle with Parmigiano and coarse black pepper. Serve with lime on the side.
