Recipes Dry-Aged Bacon and Tomato Chilled Pasta

This chilled pasta with dry-aged bacon and tomatoes is the perfect dish for warm days. The refreshing combination of cherry tomatoes and fresh basil pairs beautifully with the rich, savory and crispy Jones Dairy Farm Dry-Aged Bacon. It’s light, flavorful, and ideal for enjoying on a sunny afternoon!

Dry-Aged Bacon and Tomato Chilled Pasta
Servings: 230 minutes

  • 4 slices Jones Dairy Farm Dry-Aged Bacon
  • 160 g angel hair pasta
  • 8 cherry tomatoes
  • 1 clove garlic
  • 300 ml tomato juice
  • 1 tablespoon lemon juice
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil to taste and garnish
  • 1Preparation: Cut the cherry tomatoes in half. Chop the fresh basil coarsely. Cut 2 slices of Dry-Aged Bacon into 1 cm pieces and fry in a pan without oil until crispy. Fry the other 2 slices whole for topping until crispy, then place on paper towels. Chill the serving plates in the refrigerator.
  • 2In a bowl, combine the tomato juice, cherry tomatoes, fresh basil, grated garlic, lemon juice, salt, and pepper. Gradually add the olive oil while mixing. Add the chopped Dry-Aged Bacon along with the oil and mix well. Chill in the refrigerator.
  • 3Cook the angel hair pasta according to the package instructions, then drain and rinse with cold water to cool. Submerge in ice water, then drain again and pat dry with paper towels. Toss in olive oil and salt to taste.
  • 4Combine pasta with sauce from (1) and mix well.
    Serve on plates and garnish with basil, lemon slices, and the whole piece of Dry-Aged Bacon.
